Bok choy

Bok choy is used in many Asian dishes and stir-fry recipes. We often enjoy it sautéed or in a soup, as well as a base for a vibrant salad. It is crisp, has lots of bite and flavour.

This salad is ideal if dressed a few minutes before serving so the dressing has a little time to penetrate through the bok choy. I like to serve it on a platter.
